We love gastronomy and we always understand it accompanied by interesting wines, revealing an origin or a history, full of meaning and, above all, flavor and pleasure. The good table, the friends, the moments…
Now that the holidays are approaching, now that we start thinking about Christmas lunches and dinners, we have taken a look at some of the wines that we would like to toast with. They have helped us choose recent events that have taken place in Burgos and that put our city on the crest of the wave of wine culture. For example, the tasting offered by the Ribera winery Payment of Chaplains in summer and the essential Winegrowers' Show that was organized at the end of October by the El Lagar Wine Bar in its warehouse in Villalonquéjar.
We have chosen a few wines, relating them to various possible moments of enjoyment at Casa Secuoya. These are our suggestions, but there may be many more options. Come, see and taste!
Happy snacks on the terrace and garden
It's starting to get cooler, but if the holidays are sunny, our outdoors are perfect for uncorking cheerful bottles. And we are thinking about a sparkling wine that we have recently discovered and we loved: Gramona La Cuvée. He is the youngest son of one of the most prestigious houses in this bubble business. It is direct and complete, there is a lot of quality here, within a really accessible philosophy. It goes in so well that we don't count it by glasses but by bottles.
Close the powerpoint, open a red wine
What better way to end a work meeting than toasting the company's successes with a glass of wine. Let's do it with two versatile red varieties, which are usually liked by all palates: Grenache and Mencía or, in other words, the Mediterranean side and the Atlantic side of the Iberian Peninsula, respectively. Two specific brands that convince us are the Garnacha Rioja from La Montesa and the Mencía Berciana Ultreia.

Start your Christmas meal off right
The first course sets the tone. It has to be refreshing but with character. Soft but original. If we are looking for personality, let the wine have it too. We chose a white from Valdeorras: O Luar do Sil. In its version on lees, it provides a versatile palate, with freshness and depth, with texture and a lot of presence in the mouth. Godello is the fashionable white grape and in this wine you can see why.
Updating the tradition of “Spanish wine”
A meeting, an inauguration, a talk... end well if at the end what is always called "Spanish wine" is served. As we like to go a little further, we would love to serve on these occasions wines from regions that until recently were peripheral but that today are in the first division of that, of Spanish wine: Tenerife. 7 Sources, the Biscayan txakoli from Doniene Gorrondona, the Majorcan Chickens and Seals, he Silica from Ribeira Sacra or the Valencian Sensal.

Wines for a great deal
If you want to celebrate a good lunch or dinner in our main room, know that you will eat very well: Ricardo Temiño is at the controls. Their meat-based main dishes are legendary for their combination of tradition and modern outlook. There is the suckling pig, for example. Regarding the ideal wine for this, we turn to two always contemporary classics: Villota (the great red from the Laserna meander, in Rioja Alavesa) and Payment of the Chaplains Reservation (a jewel born in Pedrosa, in the heart of the Ribera del Duero).
Six o'clock wine
For some time now we have been accompanying our mid-afternoon coffee with Solana Italian cookies, which are made with rich Espinosa de los Monteros butter. If we feel like having a glass of wine to accompany the last lights of the day, we go for an Oloroso sherry or a white with substance, substance and singularity. Of those that are savored for a long time. A very suitable one: Domain of the Pidio Albillo (which is produced in Quintana del Pidio by the same family responsible for the Cillar de Silos winery).

Play rare wines
Currently the world of wine is more diverse and attractive than ever. You just have to lose your fear and let yourself be carried away by curiosity. We have discovered "rare" wines with which we could organize fun tastings in the rooms of Casa Secuoya. Almost random examples: Amorro (a curious white from Cádiz), Insolence (a very authentic red wine from Arribes del Duero), escabeces (a refreshing 'orange wine' from Tarragona), Xanledo (Ribeiro red) or Microbe, a Verdejo from the Nieva area that has left us stunned.
A call to order that is enjoyed
At a formal dinner, structured around serious dishes with a comforting touch, we would be very attracted to opening some wine from the Priorat, an area that we have recently rediscovered and that we like for the sensation of ancient order, minerality, voluptuousness and rural charm. . It's very special! They come to our minds Pissarres of Costers del Priorat, the Classic Priorat of Vini Readers or the Cims de Porrera.

Gourmet wines
We like to finish as we started: good. And with sweet desserts that means accompanying them with matching wines. It is a healthy habit, which even allows you to elevate a great meal. We really like Javier Sanz's late-harvest Verdejos and, in a completely different style, the PX that are made in Montilla Moriles. The one from the winery Perez Barquero it is a wonder. Other options are the fortified sweets from Oporto and the muscats from Malaga.
The discowines
As you know, at Casa Secuoya we host weddings and other family celebrations, which usually end in unforgettable parties under our tent. We have a bar of spirits and mixed drinks, but since this is about wines, how about dancing with a glass of sparkling rosé in your hand? He From Nit from Raventós i Blanc is pure happiness.

Finally…..
If you would like to organize your family or company dinner at Casa Secuoya, we still have dates available. We are waiting for you with ideal spaces, great cuisine by the La Fábrica restaurant and the wines you want.
